We don't have a 7 paragraph AI-generated story about how our hungry 3.5 children desperately need only the most wholesome, organic, low-fat, carb-counted, everything-free foods before their sportsball practice.
Nor do we have sponsored blubs and affiliate links for the latest and most micro-plastic infused kitchen gadget on amazon.
Or a "personal story" pitch from one of those time-saving (not really) money-saving (not really) meal-prep-as-a-service subscription boxes.
And there's no popup in the middle of each recipe asking you for your email, promising only the most secret cooking tips and discounts.

More of a concept or a technique rather than a single coherent recipe. The short version of it is: Store brand individual naan bread makes for great bread to make gyro/donair style wraps. It holds together far better than most generic pita pockets, and since you don't have to separate they layers, there is no risk of it tearing. |

 | | Quick Pickled Daikon Takuan

Takuan are the yellow japanese pickled radish slices commonly served as a side along with things like braised pork or teriyaki.
They are quite sweet. The recipe can be halved and made with thinly sliced red radishes to make smaller pickles for things like Bibimbap. |
 | | Quick Pickled Red Onions

Super easy fridge pickled red onions. Add a nice tang to burritos, tacos, and anything else. Keeps for a long time in the fridge, but best eaten within two weeks. (This is usually not a problem)

Spicy tangy garlic Zucchini pickles. These ones are a bit strong on the sour side, so they're good to add a burst of flavor to another dish.
Goes well with Bibimbap and stir fried noodles.

 | | Quick Pickled Vietnamese Radish and Carrots

Vietnamese pickled daikon radish and carrot, goes great on Bahn Mi Naan Wraps or as a versatile side or snack.
Ruby has been known to just eat these straight out of the fridge. This is one of those recipes where it is worth the extra effort of setting up and later cleaning the mandolin. I have chopped this once by hand and it's not worth the extra work. |
 | | Soy Ginger Sake Marinaded Mushrooms

While not a pickle in the traditional sense, these mushrooms fill that niche of flavorful veggies that compliment a larger dish.
These mushrooms have a shorter shelf life that the other quick pickle recipes, but this is rarely a problem.
I make these for topping bibimbap, and they don't last more than a day or two. |
 | | Spicy Garlic Pickled Banana Peppers

These pack a punch. Sweet and tangy, with enough burn that you feel it, but not so much that it gets in the way of whatever you pair them with.
The garlic adds a different kind of boldness to the spice of the peppers. Don't worry if the garlic turns blue! This is a harmless chemical reaction which does not affect the flavor or texture. |
